Blogmas day 9 | Mince pies

Hello lovelies,
Today I'm going to be showing you how I made mince pies, I used the recipe from zoella.co.uk but I tweaked it slightly as some of the measurements didn't seem right. I hope you enjoy this post and as always, if you bake them let me know in the comments or send me a picture.

Ingredients |
680g Plain flour.
400g Unsalted butter.
4tbsp Caster sugar.
5 Large eggs (One for the glaze).
3tbsp Water.
1 Pinch of salt.
1 Jar of mincemeat.

Step 1 |
Sift the flour and the salt into a large mixing bowl and then use a wooden spoon to mix them together.


Step 2 |
Add your butter to the flour/salt and then use your fingers to mix the butter, rub the butter and flour between your finger tips to make a crumb like texture.


Step 3 |
Now add your sugar and 4 of the eggs to the butter and flour mix. I used a women sponge to mix it at first and then I just used my hands, I didn't use an e electric mixer because I didn't want to over work the dough.



Step 4 |
When your mix looks a little something like this, take it out of the bowl and form a ball. Wrap this in cling film and place in the fridge for about 30 minutes.



Step 5 |
While the dough is chilling, grease a muffin tin and then dust with flour. This will stop your piece pies sticking to the tin when they are baked.


Step 6 |
When the dough is ready, pop it onto a floured surface and roll it tout to about 1/2cm thick. I then used a cutter to cut out 12 circles and then gently place each circle into your muffin tin. Make sure there are no cracks in the pastry. When all the cases are filled, get the mincemeat and fill each case with a tablespoon of mincemeat (Or less, my family just like over filled mince pies). I then cut out little stars and placed them on top. Use the last egg to mix up and then brush over all the pies. Bake in the oven for around 20-25 minutes until they are golden brown.


And here's the finished product. I dusted a little bit of icing sugar over the top to make them look a little more festive. I also got great feedback from everyone at work and they are a difficult lot to please, but they loved them.
