Pancakes |

Hello lovelies,
Sorry for the late post today. Its been a very stressful week to say the lest. I'm not going to go into it all on here, I'm sorry that I did on Monday. It wasn't right that I used a place that makes me so happy to be so sad and horrible. I'm really sorry if I offended anyone whist on my rant. Anyway, I've put on a smile and I'm ready to write something a bit better. 

Last week I was craving pancakes like mad, unfortunately my mum got cake mixes instead of pancake mixes, that meant that I had to be creative and actually make the batter instead of just buying a  packet mix. 

Ingredients |
100g Plain flour. 
2 Eggs.
300ml milk.

Step 1 |
Sift 100g of plain flour into a jug.

Step 2 |
Add two eggs to the plain flour, making sure that no shell goes into the jug.

Step 3 |
Now add 300ml of milk, I used whole milk but I'm sure you can used skimmed or semi skimmed. Now that all the ingredients are in the jug, use a fork or a whisk to mix it all together. If there are lumps then you could pop the batter through a sieve to get rid of them.

Step 4 |
Put some oil into a frying pan and let it heat. I also put some water into a saucepan and placed a plate on top, I used this to keep the pancakes warm while the rest cooked. You could just use some tin foil but I just found this easier. Test the oil by dripping a little bit of that batter into it and if it starts to cook straight away, the oil is the perfect heat to start cooking. Pour a good amount of batter into the pan and swirl it around to cover the pan. Flip your pancakes and then after about 10-15 minutes you should have around 6-8 pancakes, depending on how generous you are with the size of your pancakes.

Step 5 |
Choose your toppings and then tuck in and enjoy. I went for lemon and sugar because its my favourite and I can't really get my head around nutella and pancakes. My cousins have nutella, marshmallows and ice cream.....for breakfast and the sound of that just repulses me a little. Anyway whatever toppings you have, enjoy them. They took around 30minutes in total to make and about 8 minutes to eat them. I had the whole lot because I'm greedy and I had a stressful week, well this weeks been worse so ill probably have eaten my weight in pancakes by Friday.

Right I'm off to weep into a tub of Ben and Jerry's and stuff my face with nachos. Oh its been one hell of a week, I've cried many a river and its not even Thursday.
