Lemon meringue cupcakes |

Hello lovelies,
While I'm stuck in bed with nothing to do, I thought I would get started on a few blog posts. Last week I made lemon meringue cupcakes for the people I work with. I got really good feedback and I'm really excited to share the recipe with you today.

Ingredients |
For the cakes |
80g unsalted butter.
280g Caster sugar.
240g Plain flour.
1tbsp Baking powder
1/4tsp Salt.
1tsp Finely grated lemon zest (About 5 lemons).
2 Large eggs.
240ml Whole milk.

For the filling and meringue |
200g Caster sugar.
4 Egg whites.
Jar of lemon curd.

Step 1 |
Put the sugar, butter, baking powder and lemon zest into a mixing bowl. Mix hem together using a wooden spoon.


Step 2 |
Ass the milk, flour and the flour into the bowl and then mix all the ingredents together until it forms a smooth cake batter.

Step 3 |
Pour the batter into your cupcake cases. This mix was far to much for twelve as I realised when it overflowed when baking. This will make about 16 so please use 16 as a guide instead of twelve. Bake them for about 20-25 minutes or until they are golden brown and skewer comes out clean. When the cakes are ready, take them out and place them on a cooling rack.

Step 4 |
While the cakes are cooled, fill a piping bag with a jar of lemon curd. Make a small cut in each cupcake and insert the nozzle of the piping bag into the cupcake. Pipe the lemon curd into the cupcakes until you feel pressure on the nozzle, this means that the cake if full.

Step 5 | 
To make the meringue, put your sugar and water into a saucepan and heat it until its a sugar syrup. In a bowl put in your egg whites and use an electric mixer to mix then until you have a glossy mix that has soft peaks. When the sugar is ready, put the mixer on the lowest speed and add the syrup slowly to the egg whites. Make sure you keep mixing it. When its added turn the mixer up to a medium speed and continue to mix until you have stiff peaks.

Step 6 |
Fill your piping bag with your meringue and then start piping all your cupcakes. Mine looked awful but I don't have great nozzles for piping. When you have piped them all, pop them under a grill on the medium setting and grill until they go golden brown. If you have a blowtorch then use it. I only had to use the grill as I don't have one, they would have looked much better if I did.

 When your cupcakes are done, you can finally taste them and enjoy them. I took these to work and got really good feedback about them. My work chums are loving having cake most Sundays and I love trying out my new cake ideas. I hope you enjoy these as much as they did at work.
