Oreo cheesecake |

Hello lovelies

Today's baking post is very exciting for me. Last week I made an oreo cheesecake and I had a lot of great feedback about it, so I thought I would share the recipe with you. I wanted to make a cheesecake  for ages because according to my mum and my aunt, my nan made the best cheesecake ever. I wanted to make my own as a little tribute to her and to see what my mum and aunt thought.

Ingredients |
140g unsalted butter
300g bourbon biscuits, broken up
500g cream cheese, softened
85g icing sugar
300ml double cream
1 tsp vanilla extract
6 packs of mini oreos.
Chocolate sauce

Equipment |
Mixing bowl.
Round cake tin with removable base.
Piping bag.

Step 1 |
Crush up all your biscuits and place them in a large mixing, then melt the butter and add it to the mix. Stir it well until it everything is combined. 

Step 2 |
Empty your mixture into a round cake tin. Spread it evenly and make sure its pressed in well. If there are any gaps then find an area that has a little more picture and patch up the base. Make sure its pressed firmly as it will make it easier to cut later on. Leave your base to set in the fridge while you make your cheese frosting.

Step 3 |
Put the cream cheese and icing sugar into a clean mixing bowl. Mix it all together until all the icing sugar is combined. 

Step 4 |
In another bowl start whisking your double cream until its thickened. Once it has thickened, fold the cream into the cream cheese and icing sugar mix. Combine all this together and pour over your biscuit base. Smooth the top of your cheesecake and make sure its an even layer. Pop it in the fridge fro about an hour until its set. 

Step 5 | 
Decoder your cheesecake with your oreo's in whatever pattern you like. I also used a piping bag to pipe this terrible star design in the middle. Its up to you what design you do so if you make this then send me a picture on twitter.

Well that's it from me today. I hope you liked this baking post. My aunt said the cheesecake was delicious and looked shop bought. She also said my nan would be proud of it, which meant a lot to me.
